Giunti a dicembre è tempo, ormai, di dati quasi certi per valutare il 2021. Per Fipe il settore della ristorazione chiuderà il 2021 con 20-25 mld in meno rispetto al 2019 dove, a fine anno, l’Horeca registrò 85 miliardi di complessivo giro d’affari. Un 2021 che ha perso meno del 2020 dove furono bruciati 34 miliardi di euro. Questi dati, stima la Fipe, porteranno alla chiusura di 15 mila imprese, cosa che si riverbera in maniera importante sul settore agroalimentare. Il raggiungimento dei livelli pre-Covid si spostano pertanto al 2023, salvo nuove varianti e complicazioni.
