Il 2021 ha invertito la rotta, lo registriamo anche per le food hall e food court nei centri commerciali. «Oggi si torna con prudenza a muoversi – afferma Roberto Zoia, presidente del Cncc-Consiglio Nazionale dei Centri Commerciali – e stimiamo una ripresa di oltre il 70%». 16% è mediamente la percentuale del food&beverage nel giro d’affari di un centro commerciale, dove vi è da segnalare il trend che predilige soluzioni ristorative di piccole dimensioni, ma diversificate tra di loro a scapito di format come ristorante self service e/o ristorante free flow.
