Da un’indagine Ipsos presentata dal Consorzio Parmigiano Reggiano, emerge che la presenza di un menù dedicato ai formaggi sarebbe gradito dal 77% dei clienti della ristorazione. L’analisi di mercato, condotta su circa 1000 persone, registra che quasi otto intervistati su dieci apprezzano il carrello dei formaggi. Per il 73% è importante la presenza di personale esperto, “una sorta di sommelier del formaggio”, in grado di presentare i formaggi proposti. Cheese!
